Product overview

Chile is one of the world's two largest salmon producers, and the cold, oxygen-rich waters of the Los Lagos and Aysén regions are ideal for farming both Atlantic and Coho salmon. Toralla supplies frozen Chilean salmon to seafood importers, foodservice distributors, retail programs, and industrial processors that need a reliable, documented source with consistent sizing and export-ready paperwork.

Both species are available frozen, and the format you choose depends on your end market: fillets and portions for retail and foodservice, whole head-on/gutted (H/G) for traditional and Asian markets, and bulk formats for further processing.

Atlantic salmon (Salmo salar)

Atlantic salmon is the premium, year-round species favored in European and North American retail and foodservice. Frozen Atlantic salmon fillet is one of Chile's largest export formats. It is supplied as fillets (Trim C, D, and E, plus deep-skinned), portions, loins, and whole H/G, skin-on or skinless and pin-bone out, frozen IQF or interleaved.

Coho salmon (Oncorhynchus kisutch)

Coho — also called silver salmon or salmón coho — is a firm, bright-fleshed seasonal species harvested in the Chilean spring (roughly September to March). Frozen head-and-gutted Coho is the format of choice for Japan and other Asian markets, and Coho is also supplied as fillets.

Quality and documentation

Toralla's salmon program carries the same buyer documentation as our mussel exports: product specifications, batch traceability, cold-chain records, and certification references. Confirm packaging, glaze, carton count, freezing method (IQF or block), and destination-market documents before order confirmation.

Storage and cold chain

Frozen salmon is held and shipped at -18°C and must not be allowed to partially thaw and refreeze. Confirm the production date, shelf life, and storage temperature for your shipment, along with the health certificate and customs documentation your destination market requires.
